It's based on a per shoe basis and it is calculated using the total winnings from the shoe divided by all your bets added together. In other words how much you risked to make however much you made.

So if you made say $ 300 from the shoe, then you add up all the wagers that you made while you played the entire shoe. Lets say your total wagers was $1400. So you wagered $1400 to win $300. So $300/$1400, that would be a player advantage of .214 or 21.4%.
